Eggplant Parm
You lucky ducks! You get two posts in one day! I went to Long Island this weekend to visit my friends from school. I brought up the brownies I made the night before and we successfully ate all of them in less then a day. Oops.
We did attempt to help make the eggplant parm; however, I'd say we only helped in about 25% of the process. Oops. I guess I can still blog about it though?
i don't even have a picture of the final product, sorry! But it was delish! I will definitely try to make this on my own from start to finish in the near future. Too bad tubing sounded a little more appealing. xoxox
